History of Macarons.

It is commonly believed that the Venetians discovered the macaron during their seafaring voyages of the Renaissance era, and that the chefs of Catherine de Medici introduced the recipe to France to commemorate her marriage to Henri II. The first macarons were simple cookies made from almond powder, sugar and egg whites.

It was only at the beginning of the 20th century that an owner of a prestigious bakery store in Paris, Pierre Desfontaines, conceived the macaron current form. He got the idea to use two cookies in a double-decker fashion and placing a layer of cream in between. The macarons in the form of a cream filled cookie are now commonly found in Paris patisseries and throughout the world.
